Use an RTD sensor for temperatures up to a few hundred degrees if you need long term stable and accurate measurements. For wider temperature ranges up to a couple thousand degrees - use a thermocouple. They can handle that and tend to be a little more durable. Pick a mounting option and connection type that suits your application. Be sure to use RTD or Thermocouple wire to extend distance – regular wire won’t work.
